Yes, the real Martok knew Sisko, O'Brien, Odo, and especially Worf. And at the time of their first encounter in this episode, we don't yet know that Martok is the changeling. But since he WAS the changeling, seems like he wouldn't have almost recognized them then, or definitely recognized them later. That would just be a Because Plot or Because Drama toss-in.

Because it's still the case that they should have done something better. Knowing their half-assed excuse doesn't change that. The easiest fix would have been to have Gowron recognize them. Since Gowron WASN'T the changeling.
