I'd like it if my Plex account would add movies to a themoviedb.org list as they were "mark watched" in plex. Any clue one how one might accomplish that?

I think you should ask about that on the Plex forums, maybe someone build a plug-in for that! :) Or wants to build one.

I am not aware of such a plugin but would indeed enjoy one myself as I too am a Plex user I remember emailing them years and years ago (like maybe 2013 or so) about this and it was not something they were planning at that time. I think the more likely chance we have to see something along those lines would be if it was community made. I myself don't have the time to think about it for the foreseeable future but maybe someone else could take a stab at it?

if you also use PlexPy (Tautulli) with your Plex, you can crete custom scripts with python to interact with your plex account (like i just installed a script that compiles every movie & show released on that day in history (that's in my library) and everyday it replaces itself with a new one...)
you can request that someone build a script to link them... i actually may since i was looking for a way to link them also...
but if youse use plex & share your libraries with friends, then i suggest plexpy... it'll tell you who watches what and when, from what device and ip...
