I'm being terribly unsuccessful at matching metadata through the Infuse Apple TV app for the kids cartoon, Paw Patrol (https://www.themoviedb.org/tv/57532-paw-patrol). Each 22-minute episode consists of two 11-minute episodes. Both my files and the themoviedb listings combine the two mini episodes into one episode. Yet when I view them, episode "2" (which consists of the 3rd and 4th mini episode) are showing the metadata for the second mini episode of episode "1"...and that just repeats. I can't figure out what I'm doing wrong in my labeling of files to get it to align.

It sounds like Infuse is pulling from The TVDB. Notice how they have 47 episodes for Season 1 (as it should be): http://thetvdb.com/?tab=season&seriesid=272472&seasonid=527372&lid=7
To fix this, you would have to name your files like this: "Paw Patrol S01E01-E02" If Infuse works like Kodi's Library, or Plex, it will create two entries, one for each episode. Both entries will point to the same video file.
That might still not do what you want, but it would be a correctly named file with respect to how the data on TheTVDB is organized. (Each 11 minute episode is an episode)

Bryan's solution would work, though regarding TMDb, I think we should split the episodes too. Like with Tweeny Witches, https://www.themoviedb.org/tv/37803-the-adventures-of-tweeny-witches/season/1/ that originally aired as short 9-11 minute episodes too. Combined into one "long" episode on some sites, with a split in between indicating the following episode name etc, but only one opening and ending credits.
I don't know if the one you mentioned originally aired split, but yeah.
