Do you have an official proof ?
Oh the about and press pages of the official site, the title is written as "Bubba Ho-tep" each time the title is not completely written in capitals.

Perhaps. I just noticed IMDB and most other links and sites use a capital T.

Interesting. I was about to post it should be "Ho-Tep" too, but since the official site uses "Ho-tep", maybe we should stick with that.
On the other hand, the page title of the official site (the title you see in your browser tab) does use "Ho-Tep", so even the official site is not consistent.
Also, the TMDb contribution bible says:
And both those sites use "Ho-Tep".
So yeah, I don't know anymore.
