I'm trying to understand this. Hannibal cooks all the time, so why would a culinary book with "Sweetbreads" written in it as translation suddenly mean My God... this guy is the Chesapeake Ripper!

Special Agent Graham might have heard that the "Symphony Banquet" featured such esoteric gourmet food, so all he had to do was connect the blood drops.

Sweetbread is a culinary name for the thymus (also called throat, gullet, or neck sweetbread).
