I get Elizabeth Shu would be in back to the Future at this point, but did they have to write her off as using Daniel to get Jonny off her back and dating a college boy.

I think it was unnecessary. They could've had her back at home and have Daniel off anyway. In part three, write her off as going to college

Yeah, high school relationships aren't well known for lasting long past graduation in any case.
