So it was for her son in exchange for turning the frog into a prince. So what would she do if the princess didn't love him or her father had second doubts?

It's a long term investment. I think the frog king was weary of her intentions but he didn't really care for her daughter's happiness at first so he might have been willing to ship her off with Prince Charming.

Its a good thing he came to his senses. I think Fiona would become bored of his superficial personality or his bad tempted which would've made the land of far far away hell on earth.

He put his daughter's interests first in his last minute decision...it's already bad enough that he promised to marry her off to Charming, who was a conceited douchebag (or atleast in this version)

Was there ever a version where he wasn't? I'll admit I haven't seen the Halloween special or the fourth one. But in three he was still trying to destroy their love

Yes, the frog king was bit of an hypocrite.

You mean prince charming?
