Here is an article that might explain it?

https://screenrant.com/card-counter-hotel-furniture-cover-sheets-why/

so as I though fingerprints and bland room, though none of them makes sense

  1. for fingerprints you could just sweep things you touched or just clean everything when leaving

  2. for bland room and also fingerprints - why tightly wrap chair/desk legs, why not just hang sheet over everything without wrapping it tightly?

OCD?

I don't know if it really has any practical reason - it seems like just another of Will's fastidious ways of controlling his surroundings and keeping them as bare-bones as possible. Perhaps he's also paranoid about being watched or tracked, which ties into the law enforcement security technology Gordo's company is innovating.

Did you read the article in the link above?

No, but I just did now. Not much different from what I said.

In the film it is not explained, and in the article only hypotheses are made (which by the way do not satisfy). The film has an excellent incipit, the actors are very good and a lot of interest is created for the viewer for the entire duration. But something is missing... the ending disappoints. So many things remain unexplained... it's not good like this.
