Who was he? Where did he come from? I thought there were no warriors left in Fantasia.

Well it's never specified how much land Fantasia itself covers. Remember Falcor carried Atreyu across the 10,000 miles from the swamps of sadness to almost where the oracle was so its possible that they were in another land in the same world that did have living warriors.
