Did that change anything? Meaning did the past change to where the Terminator killed Sarah and branched off from the timeline. Shouldn't the future change around them? That would create another timeline that branches off where Kyle saves her.

I don't know about the future changing around them, since the entire movie seems stuck in a time-loop. When Sarah asks Reese about her son, he begins by saying "He's about my height". Since he wound up around Reese's height, one can logically assume that his similar size is due to already being his son to begin with.
