I don't think he dies of a heart attack, only collapses from shock. I think it might've played a bigger role in the pilot than in the film but Lynch must've decided to keep it in. Considering the subject matter of Mulholland Dr. I'd guess it's there to add another layer to the dream/wake narrative, as the man who collapses recounts a dream he had which shortly thereafter comes true.

The way I see it, Diane Selwyn needs to"get rid of" Dan because she fears that he overheard her and the hitman plotting to kill Camilla Rhodes at Winkies in the scene shown near the end.
