That's a nod to Alien V Predator. They have been fighting since over a century i guess. And about the exoskeleton i am not really sure because the alien has evolved over a century as we see in older movies.

Nah mate, Alien V Predator was about 14 years later...

Then i am not really sure. Sorry. I replied earlier as i remember reading a time line in AVP where the Predator is in hunt for a still growing / developing Alien in the year 1901. And predator 2 takes place in 1997 as per the timeline.

No worries, the timeline of the films is all over the place!

It was a nod to the AVP comic book. The first of which came out before Predator 2.

Some of them were actually good! Mainly because they were set in the Aliens / Colonial Marines universe not in the present day.

Yeah I get all that, my point is that the alien has an exoskeleton - so why do we see a skull?

Oh sorry, I was replying about the timeline.

I guess the only thing I can think of is the skull was made with the same care and craft and attention to detail as the rest of Predator 2.
